this is the recipe I learn from my friend that own all about Tofu restoran in Jakarta. It's very simple yet delicious meal! i often cook this recipe when I feel lazy to cook and eat! It's just bring out your appetite! sometimes I subtitude the ground beef with chicken or prawn.If you feel all veggies you can add any veggies you can find in your refrigerator. Selamat mencoba!!

Ingredients

Serves: 4-6

Metric Cups

For the Mapo Dofu

  • 250 grams minced beef
  • 250 grams silken tofu (or Chinese tofu, cut in dice)
  • 1 stick leek (sliced)
  • 2 bulbs of garlic (chopped)
  • ½ onion (chopped)
  • 1 centimetre piece of fresh ginger (chopped)
  • 3 bird's eye chillies (red, or fire chillies - sliced)
  • salt (to taste)
  • sugar (to taste)
  • rice (Chinese)

For the Cooking Wine Sauce

  • 1 tablespoon oyster sauce
  • 1 teaspoon chicken stock (powder)
  • 1 tablespoon cornflour
  • 100 millilitres water

For the Mapo Dofu

  • 8⅚ ounces ground beef
  • 8⅚ ounces silken tofu (or Chinese tofu, cut in dice)
  • 1 stick leek (sliced)
  • 2 heads of garlic (chopped)
  • ½ onion (chopped)
  • ⅖ inch piece of fresh gingerroot (chopped)
  • 3 bird's eye chiles (red, or fire chillies - sliced)
  • salt (to taste)
  • sugar (to taste)
  • rice (Chinese)

For the Cooking Wine Sauce

  • 1 tablespoon oyster sauce
  • 1 teaspoon chicken broth (powder)
  • 1 tablespoon cornstarch
  • 4 fluid ounces water

Method

Mapo Dofu is a community recipe submitted by Galuh Supit and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • In a hot pan, pour about 2 tbsp cooking oil, add onion, garlic and ginger, at this point you may add some salt to bring out the flavour of those aromatic ingredients.
  • Add the minced beef, cook it until it change color, add the chilli. cook a little bit, and add the tofu and the sauce.
  • then you add water, season with cooking wine and sugar. you can add more salt. but be careful since you already use it in the beginning. cook until the sauce thicken.
  • Serve with warm white Rice.
