Introduction

Excellent use of Beetroot

Ingredients

Serves: 4-8

  • 2½ cups grated beets
  • 1 cup sugar (or sweetener)
  • 4 medium eggs
  • ½ cup grapeseed oil
  • 1 tablespoon vanilla extract
  • ½ teaspoon almond extract
  • ½ cup unsweetened cocoa
  • ½ teaspoon sea salt

  • Preheat your oven to 180 C. Place the grated beet and sugar in a medium sized pot and bring to a boil. Cover and lower to simmer and cook for about half an hour or until the beet is soft.
  • Blend this mixture until smooth.
  • Beat in eggs, oil, vanilla, almond extract, unsweetened cocoa and salt until well mixed.
  • Pour into a well greased 9 inch cake pan and bake for 30 - 35 mins until a knife inserted in the center comes out clean.
