Sweet and Sour Balti Chicken

Introduction

A lovely easy indian dish - it can be as mild or as spicy as you want

Ingredients

Serves: SERVES 4

  • 3 tablespoons tomato puree
  • 2 tablespoons Greek yoghurt
  • 1½ teaspoons garam masala
  • 1 teaspoon chili powder
  • 2 cloves crushed garlic
  • 2 tablespoons mango chutney
  • 1 teaspoon salt
  • ½ teaspoon sugar
  • 2 tablespoons vegetable ghee
  • chicken breasts
  • ⅕ pint water
  • 2 fresh green chiles
  • 2 tablespoons cilantro
  • 2 tablespoons heavy cream

  • Blend together the tomato puree/yoghurt/garam Masala/chili powder/garlic/mango chutney and sugar in a mixing bowl
  • Heat the ghee in a wok. Lower the heat slightly and pour in the spice mixture. Bring to the boil and cook for 2 mins. Stirring occasionally.
  • Add chicken pieces and stir well until cooked. Add the water to thin the sauce slightly.
  • Continue cooking for 10-15 mins or until the chicken is tender.
  • Finally, add the fresh chillies, coriander and cream and cook for a further 2 minutes until the chicken is cooked thoroughly.
