Introduction

These cookies are really delicious and yes, even healthy! Very little flour is used and the rest is oatmeal! They are a great after school snack for the kids with a glass of milk or juice or lovely as an evening munchy with a cup of herbal tea.

  • 175 grams porridge oats
  • 6⅙ ounces quick-cooking oats

Method

  • Preheat oven to 180 degrees.
  • In a large bowl beat sugar and margarine till well mixed. Add egg and vanilla and beat again just enough to mix well.
  • Sift flour, salt, baking powder and cinnamon. Add to egg/sugar mixture and stir well. Add oatmeal and raisins and mix well.
  • Arrange tablespoons of mixture , not too close together, on a baking tray lined with baking paper. You might have to use your hands a bit.
  • Bake at 180 for about 15-18 minutes.
  • Let cool on rack for another five minutes and enjoy!
