Creamy Potato Bake

Introduction

The original recipe is from a SA outdoors magazine. Tried it and adapted it to our taste. Delicious as a meal on its own or as a side dish. You can experiment with different vegetables (as I have).

Ingredients

Serves: 4

  • 4 large potatoes (cut in 1cm rings)
  • 1 cup frozen sweetcorn kernels
  • 1 cup mushrooms (cut into pieces)
  • 4 slices diced bacon ( and fried lightly)
  • 1 cup cream
  • 2 cups Cheddar cheese
  • 1 pinch of salt
  • 1 pinch of pepper

Method

  • Layer the ingredients starting with the Potatoes in a greased dish (20 X 20). Leave a handful of cheese for later
  • Cover and bake at 180c for 20 min till potatoes are soft.
  • Sprinkle the last layer of cheese and bake uncovered till cheese is melted and starts to colour. Let it rest for few minutes and enjoy!
  • Additional Information

    The original recipe only had the sweetcorn, and that is delicious. You can add caramelized onions, brinjals, peas, almost any veggie you can think of and its still a winner.
