Moist Banana and Walnut Cake

Introduction

This cake is perfect for morning or afternoon tea. It's light and moist and jolly easy to make. For best results, make sure the bananas are overripe. For me this cake is a great comfort food.

Ingredients

Serves: 10

  • 1 cup butter (softened)
  • 3 medium bananas (overripe)
  • 1 cup walnuts (whole)
  • 2 medium eggs (beaten)
  • 1 teaspoon vanilla essence
  • 1 cup superfine sugar
  • ¼ cup whole milk
  • 1½ cups self-rising flour

Method

  • Preheat oven to 180ºC/360ºF and grease and line a large cake or loaf tin.
  • Cream the butter, sugar and vanilla essence.
  • Add the eggs, milk, bananas, walnuts and then self-rising flour, stirring after each ingredient.
  • Pour the mixture into the tin and bake for about 45 minutes.
  • Simple, easy and guaranteed to pick you up.

    • Great recipe - I used 3/4 cup of sunflower oil instead of butter and added a cup of chopped dates. I made a mix of mini and regular muffins which were very moist and delish. I found it a little too sweet, so plan to use 1/2 cup of sugar next time.

    • I already tried this recipe 5-6 times and everybody loved it. I used 300ml self raising flour and 75 ml cocoa, 200ml sugar and 75ml whole milk and more walnuts (500grams)

    • I doubled this recipe but used only 4 bananas not 6. I changed vanilla to cinnamon and added more walnuts. Made 2 x 2lb loaf tins, cooked for 1.30 mins. Gorgeous. Moist, banana-ey, with a lovely crunch from the walnuts. Tasted even better 3 days later. One to keep!

    • This is a great recipe. I tried it once, and then decided to adapt it to other fruits. So, I tried it with apple and cinnamon and, on another occasion, with grated carrots, sultanas and walnuts. Each variation was a winner. Very moist, easy to make, and not too sweet. Perfect!
