This Middle-Eastern delight is a favourite of mine. It was made for me once by one of my Greek-Sudanese friends who made a Sudanese version of falafel. They were flat rather than round, and packed a spicy punch; I won't eat them any other way now. I've taken a basic falafel recipe and lifted it to the stratosphere with chilli. Chilli can be omitted or reduced for those with a milder palate. Enjoy!
