Ingredients

Switch to Cup Measures
  • 3 large stalks of rhubarb (leaves removed)
  • 1 lime (juiced)
  • 125 ml brown sugar
  • 205 grams mascarpone cheese
  • 2 tablespoons vanilla essence
  • 63 ml whipping cream
  • trifle sponge (to serve)

Method

  1. Cut stalks into 5cm lengths
  2. Place into baking dish cover with brown sugar and lime juice.
  3. Bake on 200C (fan forced) for 20-30 min
  4. Whip cream until stiff. Add Vanilla and Mascarpone cheese and whip until firm.
  5. Scoop Rhubarb into favourite desert bowls and place a couple of generous table spoons of whipped cream & cheese on top.
  6. Place on a serving plate with 2 Sponge Finger biscuits each. Enjoy.
