Ingredients

Serves: about 8-10 people.

Metric Cups
  • 250 millilitres plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon bicarbonate of soda
  • 125 millilitres vegetable oil
  • 125 millilitres soft brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla essence
  • 4 bananas (ripe and crushed)
  • 2 eggs
  • 9 fluid ounces all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 4 fluid ounces vegetable oil
  • 4 fluid ounces soft brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla essence
  • 4 bananas (ripe and crushed)
  • 2 eggs

Method

  • Preheat oven to 180 degrees celsius and grease a loaf or ring cake tin.
  • In a bowl beat eggs, oil, vanilla essence and brown sugar together.
  • Sift in all the dry ingredients. Add mashed bananas and mix well. Pour batter into prepared tin and bake for about 20-25 minutes.
  • Remove from oven and cool for 10 minutes before turning cake out on a wire rack. Sift icing sugar on top and serve.

    • This Banana cake is very good, only thing is recipe says to cook for 25 minutes I not sure this is right mine always take longer. I must be doing something not quite right.

    • This is the ONLY recipe I follow when making a banana loaf! Me & my family cannot get enough if it! Moist, rich & flavoursome, as an occasional treat I top it with cream cheese frosting :) ??

    • I literally JUST made this cake (midnight snack for my partner and myself). We LOVED it! Moist, light & lovely, we served it hot with a dollop of cream. Yum!

    • The cake turned out beautifully. I added a pinch of salt, a teaspoon of nutmeg, 50 g of walnuts and 50 g of raisins as we'll to give it a bit of texture. Since it became a bit thick, I added 150 ml of water. Still, the recipe worked and the end product was a light cake, moist and fluffy. Perfect for all times of the day.
