Banana and Pecan Nuts Cake

Ingredients

Serves: 6

  • 4 ounces soft butter
  • 1 cup superfine sugar
  • 1 teaspoon vanilla essence
  • 1 tablespoon grated lemon peel
  • 2 bananas (ripe)
  • 2 tablespoons lemon juice
  • 2 large eggs
  • 2 cups self-rising flour
  • ¼ teaspoon ground cinnamon
  • 5 ounces plain yogurt
  • 2 ounces chopped pecan nuts

  • Mix together: softened butter, sugar, vanilla essences and grated lemon peel till mixture has lightened and sugar has melted
  • In a different bowl squash the bananas with the lemon juice, once well squashed add to the butter mixture and mix together.
  • Add eggs one at a time, beat well after each addition. Add rest of the ingredients except from the pecan nuts. Beat the mixture well until nice and smooth, only then add the pecan nuts.
  • Cook at 180C for 20-35 min. Very important to make sure to put tin foil on top of cake while in oven to make sure top doesn't burn!!
