This was made in my restaurant for over 12 years. It was often the dish that was associated with the place. People were nuts about this. It's disproportionately easy for the end result. And you can make inside 15 minutes, start to finnish. That's taking it easy as well.

this is an easy recipe and if you can't be bothered to boil condensed milk, you can buy nestle's tinned caramel instead it is exactly the same. Having followed this recipe, I'd reduce the amount of biscuits and butter by at least a third, and use only 1 tin of condensed milk, as my pie was huge and too sweet really. I'd also use a different less sugary biscuit, or a reduced version of digestives. My pie was just too sweet, and It was impossible to have any more than a small slice.

This recipe is similar to mine only I use dark chocolate digestive biscuits for the base, this gives a distinct sharpness to compliment the sweet milk chocolate grated topping.

Also saving gas/electricity in boiling condensed milk, there is one on the market already done, I bought one today cheaper than the cost of buying normal Nestlé condensed milk and boiling it/them.

When I'm looking to vary this classic, I add a layer of pecans which I toss in maple syrup until they go all sticky and 'caramelly', and thick plain greek yoghurt instead of the cream. Helps cut the sweetness of the caramel base.
