A fabulous smooth and creamy guacamole. Like Nigella, I am strongly against putting tomatoes into Guacamole. However, a friend of ours (the fabulous Bart Corredera) gave us a recipe for this when we were living in the Bahamas and had a glut of Avocados in the Garden (torture, darlings) and advised eating with A-hi - a spicy tomato salsa'y affair, so each can make their Guac as smooth or as spicy as one likes. Fab, subject to the availability of good avocados, of course!
