BASIC GAZPACHO

A basic gazpacho recipe, which you can then customise to your own liking, though this one works every time.

Ingredients

  • Gluten Free
  • Vegetarian
  • 1 kg tomatoes cored and chopped
  • 1 400g tin Italian plum tomatoes
  • 1 red pepper
  • 1 green pepper
  • 1 medium cucumber peeled
  • 2 slices of day old bread, dipped in water then squeezed out
  • 2 cloves garlic peeled
  • 60ml sherry vinegar
  • 3tbls best olive oil
  • salt

Method

  1. In the bowl of a food processor blend the tomatoes
  2. Now chop and add the rest, apart from the oil vinegar and salt
  3. Stir in oil and vinegar and salt
  4. Leave in fridge overnight to chill
