BASIL'S QUINOA SALAD

A really bright and colourful salad that is extremely healthy and nutritious. Completely delicious too. The veg listed below are just ideas, anything works here, especially roasted veg. the texture works so well with the quinoa. avocado's buttery texture is a must however! The iranian barberries are well worth the effort if you can find them, otherwise any sharp dried fruit - or leave it out.

Ingredients

  • Vegetarian
  • 1 cup of quinoa
  • 2 cups of water
  • 1 roasted beetroot or boiled beetroot
  • A few courgettes cut on the diagonal and roasted in olive oil
  • 1 ripe hass avocado, cut into chunks
  • Handful of coriander
  • 2 spring onions
  • 1 tablespoon pine nuts
  • 1 tablespoon Iranian barberries or dried cranberries would work.

DRESSING:

  • 3 T EVOO 1 T cider vinegar
  • Maldon salt
  • Black pepper
  • Quarter teaspoon fennel seeds (optional)

Method

  1. Take one cup of quinoa grain and add two cups of water.
  2. Allow to stand for 15 minutes.
  3. Bring to boil.
  4. Simmer for about 15 minutes, until completely absorbed.
  5. Run cold water through the grain to cool down and then drain.
  6. Roast your beetroot and courgettes.
  7. Mix up the dressing ingredients and put in a bowl.
  8. Add the drained quinoa.
  9. In a dry pan dry toast the pine nuts until coloured lightly.
  10. Fry the barberries for a few seconds in a spoon of olive oil.
  11. Add the roasted beetroot, roasted courgettes, avocado, spring onions, coriander.
  12. Mix thoroughly.
  13. Add toasted pine nuts and barberries.
