Introduction

I love the combination of shellfish like shrimp, crab or lobster combined with creamy avocado and cool crunchy cucumber. This really is so good, and i really am so greedy, that I tend to only make this only when I am alone so I don't have to share it with anyone. At least it's low carb!

Ingredients

Serves: -

  • 1 pound large shrimp
  • 1 medium cucumber
  • 1 ripe avocado
  • 1 lemon (juice - or lime)
  • olive oil
  • salt
  • pepper

Method

  • Boil shrimp until just cooked. Drain and plunge in icy water to cool. Drain and peel.
  • Peel cucumber and cut into large but bite size chunks. Peel and chunk avocado.
  • Toss all together with a bit of olive oil, lemon juice and salt and pepper.
