Healthy [ish], quick, easy and contain inexpensive ingredients. I make these at the beginning of the week to go into school lunches. They are a bit like a muesli bar but with added mummy love. :o)

Ingredients

Serves: Makes 30

Metric Cups
  • 150 grams butter
  • 2 tablespoons golden syrup
  • 250 millilitres flour
  • 250 millilitres coconut
  • 125 millilitres sultanas (or golden raisins)
  • 250 millilitres rolled oats
  • 188 millilitres caster sugar
  • 3 tablespoons water
  • 5⅓ ounces butter
  • 2 tablespoons golden syrup or light corn syrup
  • 9 fluid ounces flour
  • 9 fluid ounces coconut
  • 4 fluid ounces golden raisins (or golden raisins)
  • 9 fluid ounces quick-cooking oats
  • 7 fluid ounces superfine sugar
  • 3 tablespoons water

  1. Heat oven to 180 C. Grease or line two baking trays.
  2. Measure all dry ingredients into a mixing bowl. Gently heat butter and golden syrup together in a saucepan until butter melted.
  3. Add to dry ingredients with the 3 tablespoons water and mix. Roll small teaspoonfuls into balls and place on greased or lined baking sheets. Flatten with a fork.
  4. Bake for 15-20 minutes or until golden brown.

  • this doesnt stick together well enough to make balls. I will make it into a tray bake/flapjack type thing and cut up afterwards

  • This recipe is great to use. Instead of rolling into balls I tip the whole mix into a slice tin and then cut into bar size pieces after cooking. Also ditched the sultanas (don't like them) and instead use freeze dried fruit powder and chopped almonds. First time strawberry and second time black current. Made fantastic fruit flavoured chewy muesli bar type snack for lunch boxes.

  • Absolutely love this recipe! I have used it many times for various family members, and each time I have had compliments. Easy to make and really tasty the day after baking!

  • I don't think this recipe is correct. There is nowhere near enough wet ingredients and the mixture does not come together.
