Ingredients
Switch to Cup Measures- 100 grams caster sugar
- 220 grams butter (softened)
- 220 grams self-raising flour
- 4 tablespoons cocoa powder
Method
- Preheat oven to 190oC / 375oF / Gas 5. Cream sugar and butter. Sift flour and cocoa powder together and add to butter mixture. Mix well.
- Using floured hands, roll quite small amounts of mixture into approx 36 balls.
- Place well apart (to allow for spreading) on a lined baking sheet and squash slightly to make a squat flat circle. Bake for 8 minutes.
- Leave to cool in tin for 5 minutes, then place on a cooling rack.

My cookies are still very soft after baking for 8 minutes...is that the right consistency to take out of the oven?
