Ingredients

Switch to Cup Measures
  • 4 cod fillet (medium size)
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 1 lemon juice
  • 1 pinch of salt
  • 1 pinch of pepper
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon garlic (chopped)
  • 1 tablespoon fresh parsley (chopped)

Method

  1. Emulsify the lemon juice with extra virgin olive oil and salt & pepper Wash the peppers and cut them in thin strips. Cook them briefly in a pan with 1 tbsp of olive oil. Add the chopped herbs and some more salt, and cook for 1-2 minutes more: the vegetables must still have bite.
  2. Prepare 4 tinfoil squares, put on each a cod fillet, sprinkle with the lemon& oil emulsion and cover with the peppers. Seal the foil and place the bags in the preheated oven at 180° for 20 minutes.
