This coffee ice cream is made with thick coconut cream. I turn the coconut can upside down from where its standing and open the creamy part of a full fat chemical free coconut milk. I love coffee ice cream. When I was a child and some summers speant in Tokyo, when we were living in Hong Kong, my brother, cousin and I would go on our bicycles to the Baskin Robbins ice cream parlour. My brother had rocky road, my cousin mint chocolate chip and me, coffee. Well this is not quite the same but it has a nostalgic flavour. And its very easy to make with frozen banana, good quality coffee, coconut milk and honey or sugar. I drizzled with an instant chocolate sauce of cacao powder, coconut oil and a little almond butter and honey but it would be nice with cacao nib sprinkles and walnuts too probably.
