Quick, no fuss, tasty and very adaptable. This is a recipe from a friend of mine (Mrs Jones) who is S. African, makes curry and the like all the time. Any curry paste can be used.

Ingredients
- 2 cups red lentils
- 1 tin diced tomatoes
- 2 tablespoons curry paste
- 2 cups water
Method
- Wash lentils first and throw away any floaties.
- Mix the whole lot together and put in microwave and cook until mushy.(About 30 mins)
- Keep stirring and adding more water if needed.
- Add more curry paste if you like it hotter, I used Rogan Josh which is a medium heat.
- Add onions chopped, peas, sultana's, corn if you wish.
