Pronounced "ben-yays". A traditional dish from the Netherlands. I got the recipe from my Dutch grandfather. He made it every year at my parents' New Years' Eve party. I post the recipe in his memory.

Ingredients
- 6 cups flour
- 1 teaspoon salt
- 12 oz apples (peeled cored and sliced ½
- pineapples (cut into rings)
- bananas (sliced lengthwise and in half)
- oil (for frying)
- confectioners' sugar
Method
- Combine flour, salt, and beer. Mix with a wooden spoon to form a batter, incorporating as much air as possible
- Dip fruit in the batter and make sure that both sides are coated thoroughly
- Fry in the very hot oil until golden brown and crispy on both sides
- Remove to paper towels to dry excess oil
- Almost immediately, coat generously with powdered sugar (my father says that beignets are a vehicle for powdered sugar in the same way that lobster is a vehicle for butter!)
- Serve soon...as with fried food in general, beignets do not keep at all well!
