What does this mean?

These fluffy pancakes are great with maple syrup and a side of crispy American bacon. Perfect for a lazy Sunday morning!

Ingredients

  • 2 medium eggs
  • 1 tablespoon lemon zest
  • 1 ½ cups buttermilk
  • 6 tablespoons brown sugar
  • 4 tablespoons melted unsalted butter
  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Method

  1. Beat eggs, lemon zest, buttermilk, and brown sugar. Slowly whisk in melted butter.
  2. In a separate bowl mix flour, baking powder, baking soda, and salt.
  3. Add egg mixture to flour and mix well. If it's too thick add a bit of regular milk until it reaches the consistency you like. I find that the thicker I make the batter, the fluffier the pancakes.
