Frozen Summer Berry Pie

Introduction

A super simple ice cream pie. Refreshing, light and perfect for the warm weather. No one would guess the secret ('cheater') ingredient... It takes such little time to prepare and can be made well in advance! I hope you try it and like it.

Ingredients

  • 2 cups graham crackers (crumbs or shortbread crumbs)
  • ½ cup granulated sugar
  • ½ cup melted butter
  • 3½ pints softened vanilla ice cream (not melted)
  • 1 tin frozen lemonade (partially thawed)
  • 1 cup blueberries (fresh or frozen)
  • ½ cup blueberry preserves

  • Preheat oven 350 degrees. Line a bottom of a 12" springform pan with parchment paper.
  • Mix cookie crumbs of choice with butter and sugar. Press into pan. Bake in oven for 10 minutes. Cool, then put in fridge to let crust and pan get cold.
  • Mix lemonade into ice cream thoroughly. (Don't let it melt, should be like very thick frosting consistency). Fold in blueberries then very gently fold in preserves so there are streaks (like a marble effect).
  • Spread onto crust smoothly out to the edges. Cover surface with plastic wrap and put in freezer for at least 3 hours or up to a week.
  • Take out from freezer directly into fridge about 40 minutes before serving. Remove springform (if it's sticking because it's too cold run a hot cloth over the outside. Smooth sides with knife to make it look nice. I decorate with candies lemon slices and violets. You could also pipe whipped cream in a pattern and decorate with blueberries.
