Grandma's Green Snake Soup

Introduction

A warm winter soup that my Grandma taught me, we used to ask her : 'What's in the soup Grandma?' and she used to reply: 'Ooh, snakes!' In the end, when I grew up and asked her for the recipe, she had to admit that, in fact, it contained no snakes!!

Ingredients

Serves: 5-10

Metric Cups
  • olive oil (or butter)
  • 1 onion (or spring onions)
  • 2 sticks celery
  • 2 medium carrots
  • 2 leeks
  • 1 courgette
  • 1 packet mixed salad leaves
  • 1⅖ litres vegetable stock

  • 2½ pints vegetable broth

Method

Grandma's Green Snake Soup is a community recipe submitted by hollythedog and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Melt olive oil and butter in large soup pan (I use a mix because Grandma always says that leeks love butter!)
  • Chop onions, celery, leeks and carrots and saute on low heat for 5-10mins
  • Chop courgette and add to the mix, then cover and sweat the veggies for at least 10mins, or till veggies are soft.
  • Add the stock and the bag of salad. Simmer on low for an hour.
  • Blend all together. Serve with a dollop of cream
