HAM AND OLIVE BREAD

Came across this on the internet. It's tried and tested (and also tasted) and delicious!!! Goes great with salads.

Ingredients

  • Plain all-purpose flour – 1 2/3rd cup (or 210gms apprx.),
  • Baking Powder – 2 ½ tsp,
  • Salt – ¼ th tsp,
  • Eggs – 3,
  • Olive oil – 1/3rd cup (or 70ml apprx.),
  • White wine – ½ cup (or 100ml apprx.),
  • Ham (chopped) – 2 cups,
  • Pitted green Olives (sliced) – 1 ½ cup,
  • Gruyere Cheese (shredded) – 2 cups.

You will also need:

  • *a large bowl,
  • *a smaller bowl,
  • *a sieve,
  • a spatula,
  • *a whisk,
  • * a loaf tin,
  • *cooking spray / oil
  • pastry brush to grease.

Method

  1. Pre-heat the oven to 425°F / 220°C / Gas mark 7.
  2. In a large bowl, sieve in the flour, baking powder and salt together.
  3. In a smaller bowl, break in the eggs. To the eggs, add the olive oil and white wine, and whisk together.
  4. Pour the egg mixture to the flour, and mix to obtain a smooth lump-free batter.
  5. To the batter, add the chopped ham, olives, and the cheese. Mix well.
  6. Then pour the mixture to a greased loaf tin, and even out the top.
  7. Bake in the oven for 45 – 50 mins. (check with a skewer!)
