Introduction

Another quick party plate that I take for the buffet table. this is really easy, and goes down well with other party food, ie cold meats, cheeses etc. Feel free to use your favourites. These are the ones I use as I know they are liked by "The Party Gang"

Ingredients

Serves: 8

Metric Cups
  • olive oil
  • 1 handful mushrooms (cleaned and quartered)
  • 2 small red onions (peeled and quartered)
  • 1 red pepper (cored and quartered and quartered again)
  • 1 yellow pepper (cored quartered and quartered again)
  • 1 courgette (peeled quartered and quartered again)
  • 1 packet couscous
  • olive oil
  • 1 handful mushrooms (cleaned and quartered)
  • 2 small red onions (peeled and quartered)
  • 1 red bell pepper (cored and quartered and quartered again)
  • 1 yellow bell pepper (cored quartered and quartered again)
  • 1 zucchini (peeled quartered and quartered again)
  • 1 packet couscous

Method

Harv's Buffet Special Part Three is a community recipe submitted by Harvey Nicoll and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Heat oven to 160 or hot oven for roasting Place tin in oven to heat with a tablespoon of olive oil.
  • Toss veg in a bowl with a couple of spoons of oil then add to hot pan in oven. Roast for 15 minutes until browned but still firm. Remove drain and then chop all the veg to bitesize pieces.
  • Make up couscous according to directions. then when cold mix very gently in with veg in a serving dish. DONE!!
