I find this a real life-safer. I so often have crowds of children sleeping over at the weekend, so I make a container full of this and then I just have to whisk in egg, milk and melted butter to a cupful whenever I need a breakfast's worth of pancakes. Serve with the syrup of your choice.

Ever since I found this recipe I have kept a container ready mixed in my pantry. So handy. As New Zealanders have a really sweet tooth, I usually add a little sugar to the mix. Delicious.

For Canadian folks (or just those who like a little Canadiana), try adding a touch of cinnamon to the mix and using pure maple sugar instead of caster sugar. Fabulous!

And for a touch of Australiana may I say that your mix, Nigella, is superb ... Down here we prefer our pancakes with a good squeeze of lemon and a (further) sprinkle of sugar. Bl**dy great ! ! ! !

I have not bought a box of pancake mix since finding this recipe! It is no fail & amazingingly delicious. We now have pancakes about twice a week-thank you Nigella for this deliciousness!!! Our whole family is addicted.

I craved waffles but remembered Nigella's pancakes from seeing her show last year. Wow great mix and so easy. Nice tip to store the dry mix ready to go. Fluffy, light and just right with bananas and toffee sauce. Also with blueberries warmed with sugar - YUM. So glad I made these - kept well too for a while. So much better than plain pancakes. Thanks

These are lovely and this is great to keep in a jar all ready for a weekend brunch with some bacon and maple syrup. I sometimes put a little tinned sweetcorn into each blob of pancake batter if I'm having it with bacon and maple syrup. Gorgeous.
