Ingredients

Switch to Cup Measures
  • 150 grams dark chocolate
  • 100 ml double cream
  • 100 grams unsalted butter
  • 100 grams soft dark brown sugar
  • 2 eggs (beaten)
  • 50 grams plain flour
  • 40 grams cocoa powder
  • 25 grams ground almonds

Method

  1. Heat the oven to 200c/400F/Gas 6
  2. Melt chocolate over a pan of simmering water, stir in cream and chill in the fridge for 20-30 minutes.
  3. Grease 4 individual pudding moulds with butter.
  4. Beat together sugar and butter, then add the eggs gradually.
  5. Sift in the flour, cocoa powder, and ground almonds and mix.
  6. Half fill the pudding moulds with the mixture, then make a "well" in the middle of the mixture.
  7. Put 1 teaspoon of the chilled chocolate in the well and top with remaining pudding mixture. Bake for 10-15 mins.
  8. Serve with cream or ice cream.
