Ingredients

  • pepper (to taste)
  • salt (to taste)
  • 2 tablespoons lemon juice
  • 4 tablespoons tahini
  • 8 oz garden green garbanzos
  • 12 pitta breads (halves)
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 cup crushed black olives
  • 2 cups grated Parmesan cheese
  • 1 cup shredded mozzarella

Method

  1. In a food processor, mash the garbanzo beans. Add tahini, lemon juice, salt and pepper. Continue the processor until blended and creamy.
  2. Transfer to a serving bowl. Cover and keep in refrigerator.
  3. Brush olive oil on the pita halves.
  4. Sprinkle parmesan, mozzarella, and dried oregano on each pita half.
  5. Toast under broiler for 5-8 minutes or until cheese is melted and the pita edges are crispy.
  6. Cut into pizza style wedges. On a large flat party platter, arrange the pita pizza slices around the bowl of hummus.
