Hummus and Pita Pizza

Ingredients

Serves: 12-16

  • 8 ounces garden green garbanzos
  • 4 tablespoons tahini
  • 2 tablespoons lemon juice
  • salt (to taste)
  • pepper (to taste)
  • 12 pita breads (halves)
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 cup crushed black olives
  • 2 cups grated Parmesan cheese
  • 1 cup shredded mozzarella

Method

  • In a food processor, mash the garbanzo beans. Add tahini, lemon juice, salt and pepper. Continue the processor until blended and creamy.
  • Transfer to a serving bowl. Cover and keep in refrigerator.
  • Brush olive oil on the pita halves.
  • Sprinkle parmesan, mozzarella, and dried oregano on each pita half.
  • Toast under broiler for 5-8 minutes or until cheese is melted and the pita edges are crispy.
  • Cut into pizza style wedges. On a large flat party platter, arrange the pita pizza slices around the bowl of hummus.
  • Additional Information

    Garnish with sprigs of parsley.
