ITALIAN CHICKEN AND PASTA

Called Italian only because the ingredients are red, white and green and not because there's anything Italian about it!!! Easy to rustle up in easy stages, cheap, sooooo tasty and very filling!

Ingredients

  • Cook 1 chicken breast and dice or use left overs from Sunday roast! (white)
  • Cook 150g any pasta shapes.
  • Blanch small florets of broccoli (green).
  • Stir fry slightly to soften some red pepper strips (red).

Method

  1. Mix all above and put in oven proof tray.
  2. Make 2 x bechamel sauce (Nigella's recipe from HTE) and grate in a little cheese. A hint of cheese is what I'm after. It wasn't meant to be a real strong cheese sauce.
  3. Pour over the mix and pop in a medium oven for 20 mins.
  4. When slightly golden and bubbly tuck in. Great with garlic bread and salad and a nice white wine.
