Introduction

My Nana's recipe. It must be over 100 years old.

Ingredients

Serves: 6-8

  • coarsely grated vegetable shortening (freeze overnight to make it easier to grate)
  • preserves
  • flour
  • baking powder
  • water
  • sugar
  • salt

Method

  • Translated to metric. 454 gr flour 28 gr baking powder 250 gr preserves slightly warmed 1 cup water approx 170gr grated coarsely grated vegetable shortening (freeze overnight to make it easier to grate) 57gr sugar pinch salt
  • Sieve together the dry ingredients. Mix in the sugar and the grated coarsely grated vegetable shortening (freeze overnight to make it easier to grate).
  • Mix with the cold water until it is a firm paste. Put onto a floured board and roll into a square about 40cm....... Spread the preserves to within 2.5 cm of the edges.
  • Fold over two sides to meet the middle, then moisten the back edge and roll from front to back. Lay it in buttered greaseproof, roll up and tie securely.
  • Put into a steamer over boiling water or wrap in a pudding cloth and boil for 1+ 1/2 hours.
  • Serve with a boat of warmed preserves and cream! Enough for 6 - 8 people May also be baked like pastry on a greased tin in a hot oven 400F for about 40 minutes. In this case sprinkle the preserves with breadcrumbs before rolling
