These little salad wraps can be wrapped in rice paper rolls or nori sheets. Usually I dont like the idea of only putting vegetables in nori rolls but it actually tastes good. I put chickpeas, avocado and cashew butter sauce / tahini and kimchi. These would work well as spring rolls with rice paper wrap. The kimchi is really easy to make. Cabbage is washed and salted overnight and then mixed with a blended paste of onion garlic fish sauce and korean pepper flakes. It keeps well and ferments like saukraut. I have been enjoying these rolls as a handy lunch time snack before I check to see if the local thai restaurant is open for some tom yum or tom kha they seem to have been closed for days with their fan being broken.
