I love this recipe - seriously rich, big enough for a crowd and even better after a day in the fridge.

Ingredients

Serves: 4-6

Metric Cups
  • 1 kilogram minced beef
  • 2 cloves garlic (crushed)
  • 1 small red onion (diced)
  • 1 can kidney beans
  • 50 grams dark chocolate (grated)
  • 350 millilitres red wine (2 glasses)
  • 1 tablespoon paprika
  • 2 tablespoons cumin
  • 1 tablespoon fresh coriander (dried or crushed)
  • 1½ teaspoons cayenne pepper
  • 1 teaspoon ground cinnamon (or 1 cinnamon stick)
  • 2 tablespoons dried red chilli pepper (or one fresh diced)
  • 2 tablespoons Worcestershire sauce
  • 1 pinch of salt (to taste)
  • 1 pinch of pepper (to taste)
  • 100 grams tomato puree
  • 2 cans chopped tomatoes
  • 2⅕ pounds ground beef

  • 12 fluid ounces red wine (2 glasses)
  • 1 tablespoon paprika
  • 2 tablespoons cumin
  • 1 tablespoon cilantro (dried or crushed)
  • 1½ teaspoons cayenne pepper
  • 1 teaspoon ground cinnamon (or 1 cinnamon stick)
  • 2 tablespoons dried red chilli pepper (or one fresh diced)
  • 2 tablespoons Worcestershire sauce
  • 1 pinch of salt (to taste)
  • 1 pinch of pepper (to taste)
  • 3½ ounces tomato puree
  • 2 cans diced tomatoes

Method

  • Heat a pan to medium and lightly fry the garlic, add the mince and brown. If using fresh chilli add at this stage.
  • Add the dried coriander, cumin, paprika, cinnamon, and chilli if using dried flakes.
  • Pour in the wine, bring to the boil and then leave to simmer for 3 minutes.
  • Add the chopped tomatoes, worcestershire sauce, and tomato puree, stir well and leave to simmer for around 50 minutes.
  • Ten minutes before serving throw in the fresh coriander, chocolate and kidney beans. L

  • Additional Information

    Serve with fresh salad, a Jacket Potato, Rice, Nachos, Home Made Crusty Bread or all of the above. The only thing you really need is some soured cream and a very large spoon!
