Ingredients

Serves: 36

Metric Cups

For the Dough

  • 500 grams cake flour
  • ¼ teaspoon salt
  • 2 teaspoons baking powder
  • 50 grams butter
  • 1 egg
  • 250 millilitres water

For the Syrup

  • 1 kilogram sugar
  • 500 millilitres water
  • 1 pinch of salt
  • ¼ teaspoon ground ginger
  • 1 lemon (with peel)
  • vegetable oil (suitable for deep frying)

For the Dough

  • 17⅔ ounces cake flour
  • ¼ teaspoon salt
  • 2 teaspoons baking powder
  • 1¾ ounces butter
  • 1 egg
  • 9 fluid ounces water

For the Syrup

  • 2⅕ pounds sugar
  • 18 fluid ounces water
  • 1 pinch of salt
  • ¼ teaspoon ground ginger
  • 1 lemon (with peel)
  • vegetable oil (suitable for deep frying)

Method

Koeksisters is a community recipe submitted by musicalcook and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Sift cake flour together with salt and baking powder. Rub in the butter with your fingers, as if making a crumble.
  • Mix egg and water and add to flour mixture, kneading it into a dough.
  • Roll the dough out to a thickness of about 10mm. Cut into rectangles, about 8x4 cm. With kitchen scissors, slit each rectangle almost to the top to form 3 strands. Plait the strands, keeping each rectangle flat so that it doesn't stretch, and pinch the plaits together at the ends.
  • Place the plaits on a tray and cover with a sightly damp cloth.
  • For the syrup,

  • mix together the sugar, water, salt ,ginger and slice of lemon. Bring to boil over medium to high heat, and leave to simmer for about 15 mins, until it forms a syrup.
  • Pour into a large bowl and leave to cool. Refridgerate until cold.
  • Deep fry the Koeksister plaits in hot oil until golden. Inmediately plunge them into the cold syrup. The Koeksisters will absorb the syrup.
  • Leave to dry on a rack.
