Lace Cookies

Introduction

Butter, thin, crisp cookies with toffee-ish properties. They are lacy and are delicious when spread with chocolate!

Ingredients

Serves: 15/30

For the 30 Cookies or 15 Sandwich Cookies

  • ⅓ cup cream
  • 3 tablespoons granulated sugar
  • ⅓ cup sliced almonds (or chopped hazelnuts)
  • ⅛ kilogram candied orange peel
  • ¼ cup flour

For the Chocolate Ganache

  • 4 ounces semi-sweet chocolate
  • 1 tablespoon cream

Method

  • Preheat oven to 350 F.
  • Stir together the cream and sugar. Stir in the nuts, orange peel, and the flour.
  • On a cookie sheet lined with baking parchment or a Silpat, drop the batter onto it by the teaspoonful, spacing well apart as the batter spreads.
  • Bake for 10-15 minutes, though watching carefully as these cookies burn easily! Let cool on the cookie sheet for about 10 minutes, then move to a cooking rack to cool completely.
  • When cooled, spread one cookie with chocolate, and sandwich with another cookie.
  • To make ganache

  • melt together chocolate and cream over low heat in a double boiler. When both are thoroughly incorporated, let cool before spreading over cookies.
  • The chocolate ganache is optional. These cookies stand well on their own, unadorned.
