It may be because I was famished, or something unknown, but this took me immediately on a journey to the Meditteranean & loved every second!

Ingredients
- spinach (English)
- sourdough (or rye)
- hummus
Method
- Saute in some butter the whole bunch of spinach
- Cook toast while spinach wilts
- Season with pepper, salt and squeeze of lime.
- Spoon hommous on the toasted bread Then carefully top with spinach.
- Last but not least, a drizzle of olive oil.
