Maple Toasted Museli

Introduction

With goji berries, flaxseed oil and other goodies.

Ingredients

Serves: 8

  • ½ cup pure maple syrup
  • 4 tablespoons honey
  • 4 tablespoons canola oil (or grapeseed oil)
  • 4 cups quick-cooking oats
  • 1½ cups mixed nuts
  • ½ cup linseed meal (or LSA - linseed, sunflower and almond meal)
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • ½ cup goji berries
  • ½ cup finely chopped dried apple
  • 4 tablespoons flaxseed oil

Method

Maple Toasted Museli is a community recipe submitted by Angeldrawers and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Preheat oven to 170 C. Line baking tray with baking paper.
  • Place maple syrup, honey and oil in a small pan over low heat for 1 - 2 minutes until combined and runny.
  • Combine oats and mixed nuts in a bowl and mix through the warm syrup.
  • Bake for 10 - 20 minutes turning at least once. Remove and cool.
  • Meanwhile combine remaining ingredients, except flaxseed oil, in a large bowl. Add cooked oat mix and flaxseed oil and stir until well combined.
  • Store in airtight containers at room temp for up to 10 days.
  • Additional Information

    Fantastic with home made unsweetened yogurt and a bit of milk.
