Milkfish Sardines

Introduction

Simple and easy. This is a regular Filipino breakfast but can be had for lunch or dinner. Fish is cooked in a pressure cooker for one and a half hours so bones become so tender they can be eaten. Option to add whole cherry tomatoes for added flavour and garnish. This is best eaten with toast, French bread or garlic rice.

Ingredients

Serves: 4-6

  • 4⅖ pounds milkfish
  • 1 small carrot (sliced in thin rounds)
  • 2 sliced thinly pickles
  • 6 parts red finger chilli
  • 2 bay leaves
  • black peppercorns
  • 1 clove
  • 1 cup olive oil
  • 1 cup water
  • 1 teaspoon chinese rice wine
  • 1 can tomato sauce
  • 1 tablespoon sea salt

  • Clean fish and remove scales, heads and tails.
  • Arrange fish flat inside pressure cooker.
  • Spread carrots and pickle slices, finger chilli, bay leaves, peppercorn and clove. In a bowl, mix oil, water, sugar, rice wine, tomato sauce and salt. Pour over the fish.
  • Pressurize for 1 1/2 hours. Remember to move the cooker once in a while to avoid burning the fish.
