Add the zucchini and salt and pepper to season. Next, add the water, stir to combine, cover pan and cook on low heat until zucchini and onions are done.
Using a food blender, puree ingredients in batches to blend everything together. So, in goes broth, veggies, pesto, puree and pour into a large pot. Continue until all ingredients have been pureed and poured into the pot.
Return the pot to the stove and heat through.
Serve hot or cold with a sprinkle of grated Parmesan cheese on top.
