Ingredients

Switch to Cup Measures
  • 7 cloves garlic
  • 112 grams sugar
  • 15 grams fresh root ginger
  • 20 grams dried chillies
  • 450 grams dates
  • 625 ml white wine vinegar
  • salt (to taste)

Method

  1. Stone the dates and blitz them in your food processor.
  2. Blitz the chillies, ginger, garlic with a dash of vinegar.
  3. In a pan mix the sugar and the rest of the vinegar. Add the ground chili mixture. You can add a few cloves and a stick of cinnamon to this mixture for fragrance.
  4. Boil until the mixture is thick.
  5. Let it cool and then add the dates. Then pour into sterilised jars.
