Ingredients

Serves: 4-6

Metric Cups
  • 5 kilograms turkey
  • 1 onion
  • 1 bunch fresh parsley
  • 1 bunch fresh thyme
  • 1 packet unsalted butter
  • 3 rashers bacon (long rashers)
  • olive oil
  • 11 pounds turkey

Method

Perfect Xmas Turkey is a community recipe submitted by JoJo_Aussie and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • The day before you need to cook the turkey make sure it is completely defrosted, needs about 12 hours per kilo to defrost the night before you want to cook the turkey, rinse it with cool water and pat dry with paper towel place in your fridge uncovered over night
  • several hours before you need to cook it, take it out of the fridge to bring to room temperature
  • place the onion, parsley and thyme in the cavity of the turkey rub the outside of the turkey with the butter
  • add some oil to your roasting dish, then line the base with bacon place the turkey breast side down on top of the bacon
  • heat oven to 190 degrees celsius or gas mark 5
  • cook for 20min per kilo + for turkeys 4kg or under an extra 70min or + for turkeys 4kg or over an extra 90min
  • 30min before cooking time is over, turn the turkey breast side up and remove bacon gently cook for the remaining 30min or until skil in golden and crisp and the juice runs clear remove from oven, rest for 20-30 min ENJOY

    • Good, simple recipe. I added lemon to the cavity with the onions and spices as well and it gave it even more flavor. Thanks for the post.
