Pineapple Cake

Introduction

This cake is really moist and delicious. Perfect for tea time.

Ingredients

Serves: 6

  • 4 eggs
  • 4 egg yolks
  • 2 cups sugar
  • 2 cups flour
  • 1 teaspoon baking powder
  • 2 cups heavy cream
  • 1 can sliced pineapple

Method

  • Preheat oven to 180C (350F). Butter cake mould and sprinkle with sugar.
  • Put pineapple slices at the bottom of the mould.
  • Beat all egg yolks (8) with sugar until very pale. Add heavy cream.
  • Mix flour with baking powder and add to egg yolk mixture.
  • Finally, beat egg whites in firm peaks and add to previous mixture.
  • Pour batter on top of pineapple slices. Cook in the oven for about 45 minutes.
