RED TOMATO AND CELERY CHUTNEY

This is another fab recipe from my amazing Womens Institute jams pickles and chutneys book.

Ingredients

  • Vegetarian
  • 1 lb onions, processed 
  • 1 large or 2 small heads celery processed 
  • 11/2 pints malt vinegar 
  • 2 oz while pickling spices tied in a muslin bag (I sometimes use a popsock) 
  • 2 1/4 lb red tomatoes chopped 
  • 1 lb cooking apples peeled cored and processed 
  • 2 tsp salt 
  • good pinch cayenne 
  • 12 oz light soft brown sugar 
  • 8 oz sultanas or raisins

Method

  1. Put the onions, celery, spices and half the vinegar in your preserving pan, bring to the boil and simmer for 30 minutes till almost tender. 
  2. Add the other ingredients, bring to the boil then simmer for 11/2 -2 hours until there is no free liquid. 
  3. Stir from time to time to prevent sticking. 
  4. Remove the spice bag then pot when cool.
