SALSA VERDE

Serve over simple grilled pork, chicken, fish, lamb, beef, lol vegetables, anything really - goes well with roast chicken and steamed vegetables too:) Also lovely used to dress a simple leafy salad.

Ingredients

  • Vegetarian
  • 1 Clove garlic
  • 2 Cups roughly chopped parsley
  • 1 Cup roughly chopped mint or basil or coriander
  • 1 TSP Dijon mustard
  • 1 TBSP Red wine vinegar
  • 1 TBSP Capers
  • 1 scant TSP salt flakes
  • 1/3 Cup (metric) Olive Oil (extra virgin if you like)

Method

  1. Put the garlic, salt, herbs vinegar and olive oil in blender, and whizz until almost to the consistency you want.
  2. Add the capers and whizz again until just incorporated.I like the capers to be just roughly chopped.
