I always make a large vat of these since they're lovely to pick at in the fridge. Plus, although they're easy to make, you do need quite a few ingredients - and this holds true whether you're making a small or big batch, so you may as well go all out.
I buy ready-cooked egg noodles from the supermarket, which make these even faster to fix.

I made this for a few packed lunches, and substitued snowpeas for green beans, as they are significantly cheaper. Put some chilli oil in the dressing too. And added some firm tofu that I lightly fried. Very good, and accidentally vegan too!

This is a recipe I had come across a while ago and wasn't too keen to try it as how could just mixing a few things together make such a delightful feast.. more hooh hah than neccessary... THEN i tried it and OH MY GOD... it is simple and so delicious.. and awfully addictive...thank you Nigella...love your Express series of recipes...
