This is the recipe my mother always used and I love them for breakfast served warm with butter and strawberry jam.

Ingredients
- 1 ¼ cups flour
- 0.2 teaspoons salt
- ⅓ cup currants
- 1 teaspoon baking powder
- 2 tablespoons butter
- ½ cup milk
- oil (for frying)
Method
- Combine flour, baking powder and salt. Cut in butter until mix resembles coarse meal.
- Stir in currants. Add just enough milk, a little at a time, to make a firm dough that is like a pie crust.
- Roll out onto a well-floured surface to 1/4 inch thickness. Cut into rounds about 2 1/2 inches in diameter.
- Coat the bottom of a heavy frying pan with oil. On a low heat, fry cakes 4-5 minutes on each side until nicely browned.
- Serve piping hot. Makes 8-9.
