What does this mean?

A real Singing Hinnie would never traditionally be cut before baking. Best eaten hot. A mixture of sour cream and milk can also be used.

Ingredients

  • 4 oz all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 oz butter
  • 1 oz lard
  • oz currants
  • sour milk

Method

  1. Sieve together flour, baking powder and salt into a mixing bowl.
  2. Rub in the fats to make fine 'breadcrumbs'.
  3. Add currants and mix. Mix to a soft dough with the sour milk.
  4. Turn onto a floured board.
  5. Roll into a round 7" - 8" thick. Cut into halves or quarters for easier handling.
  6. Heat a girdle (griddle) and grease it, suet is best.
  7. Bake for about 3 minuets on each side or until pale golden brown and firm.
