Ingredients

Switch to Cup Measures
  • 100 grams butter
  • 100 grams soft brown sugar
  • 150 grams self-raising flour
  • ½ teaspoon mixed spice
  • 2 eggs
  • 1 lemon (rind and juice of)
  • 75 grams caster sugar

Method

  1. Grease and live 18cm square tin
  2. Warm butter and sugar(brown) in a pan.
  3. Stir lemon rind, flour, spice and eggs
  4. Pour into prepared tin and bake 180c,350f, gas mark 4
  5. Mix lemon and caster sugar and pour over the warm baked cake, allow to cool in the tin
