  • 100 grams soft brown sugar
  • 150 grams self-raising flour
  • ½ teaspoon mixed spice
  • 2 eggs
  • 1 lemon (rind and juice of)
  • 75 grams caster sugar
  • 4 ounces butter
  • 4 ounces soft brown sugar
  • 5 ounces self-rising flour
  • ½ teaspoon pumpkin pie spice
  • 2 eggs
  • 1 lemon (rind and juice of)
  • 3 ounces superfine sugar

Method

  • Grease and live 18cm square tin
  • Warm butter and sugar(brown) in a pan.
  • Stir lemon rind, flour, spice and eggs
  • Pour into prepared tin and bake 180c,350f, gas mark 4
  • Mix lemon and caster sugar and pour over the warm baked cake, allow to cool in the tin
