Ingredients

Serves: 8-10

For the Cake

  • 8 ounces chopped dates
  • 10 fluid ounces boiling water
  • 4 ounces soft butter
  • 6 ounces superfine sugar
  • 3 eggs (at room temperature, beaten)
  • 8 ounces sifted flour
  • ½ teaspoon cinnamon
  • 1 teaspoon baking soda
  • 3 drops vanilla essence

For the Topping

  • 3 ounces soft brown sugar
  • 2 ounces butter
  • 9 teaspoons heavy cream

Method

  • Oven 180c,350f,gas 4 Grease 9" spring form tin
  • Cover dates with boiling water
  • Cream butter and sugar, Gradually add eggs, Fold in flour and cinnamon
  • Add bicarb and essence to dates. Pour onto creamed mixture and Stir until thoroughly mixed
  • Put into prepared tin, bake approx 1-1 1/4 hours until well risen and firm. Leave in tin
  • Make topping by heating gently the butter,sugar and cream.when sugar dissolved bring to boil then simmer for 3 mins.
  • Pour over cake and grill until top bubbling. Leave in tin until topping set, then remove and cool on cake wire
