Metric Cups
  • 2 tablespoons olive oil
  • 1 teaspoon white wine vinegar
  • 1 clove garlic (if you're timid, if not 3 or 4! Crushed or finely chopped)
  • 175 grams natural yogurt
  • ½ cucumber (diced)
  • 7 mint leaves (fresh)
  • salt
  • pepper
  • 2 tablespoons olive oil
  • 1 teaspoon white wine vinegar

  • 6 ounces natural yogurt
  • ½ cucumber (diced)
  • 7 mint leaves (fresh)
  • salt
  • pepper

  • Whisk together the oil and vinegar, add the yoghurt and stir well together.
  • Add the garlic, cucumber and mint leaves and stir to combine.
  • Leave for 2 hours or so in a cool place for flavours to develop.
  • Serve drizzled with a drop more olive oil and a grind of black pepper on the top.
